- 1 cup cherry tomatoes, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1 avocado, diced (optional)
- 1 tablespoon olive oil
- Juice of 1 lime
- Salt to taste
- Black pepper to taste
Instructions
- In a large mixing bowl, combine corn, tomatoes, red onion, jalapeño, and cilantro.
- If using avocado, gently fold it into the mixture.
- Drizzle with olive oil and lime juice.
- Season with salt and black pepper to taste.
- Mix everything gently until well combined.
- Chill in the refrigerator for 15–30 minutes for best flavor, or serve immediately.
Notes
- Use grilled or roasted corn for extra flavor.
- Add black beans for added protein and texture.
- This salsa can be made a few hours ahead and stored in the fridge.
