Description

Classic stuffed bell peppers are a hearty and flavorful dish made with bell peppers filled with a savory mixture of ground beef, rice, tomatoes, and seasonings, then baked to perfection.


Ingredients

  • 6 large bell peppers, tops cut off and seeds removed
  • 1 lb ground beef
  • 1 cup cooked white rice
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes, drained
  • 1 cup shredded mozzarella or cheddar cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 2 tbsp olive oil
  • 1/2 cup tomato sauce (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet over medium heat. Sauté onion and garlic until softened.
  3. Add ground beef to the skillet and cook until browned. Drain any excess fat.
  4. Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Mix well and simmer for 5 minutes.
  5. Place bell peppers upright in a baking dish. Fill each with the beef and rice mixture.
  6. Top each stuffed pepper with shredded cheese and a spoonful of tomato sauce, if using.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
  8. Let cool slightly before serving.

Notes

  • Use any color bell peppers you prefer.
  • You can substitute ground beef with ground turkey or plant-based meat for a different option.
  • Leftovers store well in the refrigerator for up to 3 days.
