- 6 large bell peppers, tops cut off and seeds removed
- 1 lb ground beef
- 1 cup cooked white rice
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 (14.5 oz) can diced tomatoes, drained
- 1 cup shredded mozzarella or cheddar cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 1/2 cup tomato sauce (optional, for topping)
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Sauté onion and garlic until softened.
- Add ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in cooked rice, diced tomatoes, salt, pepper, and Italian seasoning. Mix well and simmer for 5 minutes.
- Place bell peppers upright in a baking dish. Fill each with the beef and rice mixture.
- Top each stuffed pepper with shredded cheese and a spoonful of tomato sauce, if using.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
- Let cool slightly before serving.
Notes
- Use any color bell peppers you prefer.
- You can substitute ground beef with ground turkey or plant-based meat for a different option.
- Leftovers store well in the refrigerator for up to 3 days.
