Description

These classic potato latkes are crispy, golden brown, and incredibly easy to make. Perfect for Hanukkah or any time you’re craving savory fried potatoes.

Ingredients

Units Scale
  • 4 medium russet potatoes, peeled
  • 1 small onion
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Vegetable oil, for frying

Instructions

  1. Grate the potatoes and onion using a box grater or food processor.
  2. Place the grated mixture in a clean kitchen towel and squeeze out as much moisture as possible.
  3. Transfer the mixture to a large bowl and add eggs, flour, salt, and pepper. Mix well.
  4. Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat.
  5. Scoop heaping tablespoons of the mixture into the hot oil and flatten with a spatula to form pancakes.
  6. Fry until golden brown and crispy, about 3-4 minutes per side.
  7. Drain on paper towels and serve warm.

Notes

  • For extra crispiness, make sure to squeeze out as much moisture as possible from the potatoes.
  • You can keep latkes warm in a 200°F oven while you finish frying the rest.
  • Serve with applesauce or sour cream for a traditional touch.
