  • 1 lb beef stew meat, cubed
  • 5 cups beef broth
  • 2 tablespoons tomato paste

Vegetables

  • 4 carrots, peeled and sliced
  • 2 celery stalks, chopped
  • 4 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced

Seasoning

  • 1 teaspoon dried thyme
  • Salt and pepper to taste


Instructions

  1. Brown the Beef: Heat a large pot over medium-high heat. Brown the beef stew meat in batches to ensure a good sear, then set the browned meat aside to keep warm.
  2. Sauté the Vegetables: In the same pot, add the chopped onions, sliced carrots, chopped celery, and minced garlic. Cook over medium heat until softened and fragrant, about 5 minutes.
  3. Add Tomato Paste and Beef: Stir in the tomato paste and cook for 1 minute to develop flavor. Then return the browned beef to the pot.
  4. Add Broth and Seasonings: Pour in the beef broth, then add the diced potatoes and dried thyme. Season with salt and pepper according to your taste.
  5. Simmer the Stew: Bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer gently for 1 to 2 hours, until the beef is tender and the vegetables are cooked through, stirring occasionally.

Notes

  • For thicker stew, mash some of the potatoes against the side of the pot or add a slurry of cornstarch and water at the end of cooking.
