Description

Cilantro Lime Rice is a flavorful and aromatic rice dish, perfect as a side to Mexican or Tex-Mex meals. It combines the freshness of cilantro with the zestiness of lime for a refreshing and delicious twist on traditional rice.


Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced and zested
  • 1 tablespoon butter (optional)

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, bring 2 cups of water to a boil with the olive oil and salt.
  3. Add the rice to the boiling water, stir, and reduce the heat to low. Cover and simmer for 18-20 minutes, or until the water is absorbed and the rice is tender.
  4. Remove the saucepan from heat and let the rice sit, covered, for 5 minutes.
  5. Fluff the rice with a fork and stir in the chopped cilantro, lime juice, lime zest, and butter (if using).
  6. Serve warm as a side dish.

Notes

  • For extra flavor, you can use chicken broth instead of water.
  • If you prefer a more intense lime flavor, feel free to add extra lime juice or zest to taste.
