- 6 chicken thighs, bone-in and skin-on
- 1/4 cup fresh cilantro, chopped
- 3 tablespoons lime juice (about 2 limes)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- In a bowl, whisk together cilantro, lime juice, olive oil, garlic, cumin, paprika, chili powder, salt, and black pepper.
- Place the chicken thighs in a large resealable bag or a shallow dish and pour the marinade over them. Coat well and refrigerate for at least 30 minutes, preferably 2 hours.
- Preheat oven to 400°F (200°C).
- Heat a large oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for 3-4 minutes until golden brown.
- Flip the chicken and transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven, let rest for 5 minutes, and garnish with additional chopped cilantro before serving.
Notes
- Marinate the chicken longer for deeper flavor.
- Can be grilled instead of baked for a smoky flavor.
- Serve with rice, tortillas, or a fresh salad.
