Description

Juicy and flavorful cilantro lime chicken thighs marinated and cooked to perfection, perfect for a quick and delicious meal.


Ingredients

  • 6 chicken thighs, bone-in and skin-on
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons lime juice (about 2 limes)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a bowl, whisk together cilantro, lime juice, olive oil, garlic, cumin, paprika, chili powder, salt, and black pepper.
  2. Place the chicken thighs in a large resealable bag or a shallow dish and pour the marinade over them. Coat well and refrigerate for at least 30 minutes, preferably 2 hours.
  3. Preheat oven to 400°F (200°C).
  4. Heat a large oven-safe skillet over medium-high heat and sear the chicken thighs skin-side down for 3-4 minutes until golden brown.
  5. Flip the chicken and transfer the skillet to the preheated oven. Bake for 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  6. Remove from oven, let rest for 5 minutes, and garnish with additional chopped cilantro before serving.

Notes

  • Marinate the chicken longer for deeper flavor.
  • Can be grilled instead of baked for a smoky flavor.
  • Serve with rice, tortillas, or a fresh salad.
