Description

This hearty and healthy Chunky Turkey Spinach Soup is packed with lean ground turkey, fresh spinach, tender vegetables, and flavorful herbs. It’s a cozy, one-pot meal that’s perfect for a comforting lunch or dinner, and it comes together quickly with simple ingredients.


Ingredients

  • 1 lb ground turkey

  • 1 tablespoon olive oil

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, peeled and sliced

  • 2 celery stalks, chopped

  • 1 zucchini, chopped

  • 1 can (14.5 oz) diced tomatoes, undrained

  • 6 cups low-sodium chicken broth

  • 2 cups fresh baby spinach

  • 1 teaspoon dried basil

  • 1/2 teaspoon dried thyme

  • Salt and pepper to taste


Instructions

  1. In a large pot, heat olive oil over medium heat. Add the ground turkey and cook until browned, breaking it up with a spoon.

  2. Add the onion and garlic, and sauté for 2–3 minutes until softened.

  3. Stir in the carrots, celery, and zucchini. Cook for another 5 minutes, stirring occasionally.

  4. Pour in the diced tomatoes (with juices) and chicken broth. Add basil, thyme, salt, and pepper.

  5. Bring to a boil, then reduce heat and let simmer for 20–25 minutes, or until vegetables are tender.

  6. Stir in the spinach and cook for 2–3 more minutes, just until wilted.

  7. Taste and adjust seasoning if needed. Serve hot.


Notes

  • You can swap ground turkey with shredded cooked turkey or even ground chicken.

  • Add a can of white beans for extra protein and fiber.

  • For a spicy kick, add a pinch of red pepper flakes.
