Description

  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup granulated sugar

Wet Ingredients:

  • 2 large eggs
  • 1 cup buttermilk
  • 1/3 cup vegetable oil
  • 1 teaspoon vanilla extract

Cream Cheese Filling:

  • 6 oz cream cheese, softened
  • 1/4 cup granulated sugar
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat the oven: Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
  2. Mix dry ingredients: In a large bowl, whisk together flour, cocoa powder, baking soda, salt, and 1 cup sugar.
  3. Combine wet ingredients: In another bowl, whisk eggs, buttermilk, oil, and 1 teaspoon vanilla extract until smooth. Add to dry ingredients and stir just until combined.
  4. Prepare filling: In a small bowl, beat cream cheese, 1/4 cup sugar, egg yolk, and 1/2 teaspoon vanilla extract until smooth.
  5. Assemble muffins: Fill muffin cups halfway with chocolate batter, add cream cheese mixture, top with more chocolate batter, and sprinkle with chocolate chips.
  6. Bake: Bake for 18–22 minutes until a toothpick comes out clean.
  7. Cool and serve: Cool in the pan for 5 minutes, then transfer to a wire rack.
