- 1 cup creamy peanut butter
- 1/2 cup honey or maple syrup
- 1/4 cup coconut oil, melted
- 1 tsp vanilla extract
- 2 cups old-fashioned rolled oats
- 1/2 cup almond flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup mini chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
- In a large bowl, mix together the peanut butter, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.
- Add the oats, almond flour, baking soda, and salt. Stir until combined.
- Fold in the chocolate chips.
- Press the mixture evenly into the prepared baking dish.
- Bake for 15–18 minutes, or until edges are golden brown.
- Allow to cool completely in the pan before slicing into bars.
Notes
- You can substitute almond flour with oat flour if desired.
- Use dairy-free chocolate chips for a vegan option.
- Store bars in an airtight container at room temperature for up to 5 days.
