Description

These Chocolate Chip Peanut Butter Granola Cookie Bars are chewy, nutty, and filled with melty chocolate chips – a perfect snack or dessert bar for peanut butter lovers.


Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 2 cups old-fashioned rolled oats
  • 1/2 cup almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup mini chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a large bowl, mix together the peanut butter, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth.
  3. Add the oats, almond flour, baking soda, and salt. Stir until combined.
  4. Fold in the chocolate chips.
  5. Press the mixture evenly into the prepared baking dish.
  6. Bake for 15–18 minutes, or until edges are golden brown.
  7. Allow to cool completely in the pan before slicing into bars.

Notes
