Instructions

  1. Preheat and prepare dish: Preheat the oven to 375°F and lightly grease a 9×13 inch baking dish to prevent sticking.
  2. Make chipotle honey sauce: In a small bowl, whisk together honey, minced chipotle peppers, olive oil, smoked paprika, salt, and black pepper until well combined.
  3. Coat the chicken: Place the chicken pieces in the prepared baking dish and pour half of the honey-chipotle mixture over them, tossing well to coat evenly.
  4. Prepare rice mixture: In a separate bowl, combine the rice, chicken broth, diced onion, diced red bell pepper, and minced garlic. Spread this mixture evenly around and under the coated chicken in the baking dish.
  5. Add remaining sauce: Pour the remaining honey-chipotle sauce over the rice layer to ensure even flavor.
  6. Bake covered: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 35 to 40 minutes, or until the chicken is fully cooked and the rice is tender.
