Description

A hearty and flavorful vegetarian twist on the classic Sloppy Joes made with protein-rich chickpeas in a tangy, smoky tomato-based sauce.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 2 garlic cloves, minced
  • 1 (15 oz) can chickpeas, drained and mashed
  • 1/2 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 4 hamburger buns

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add onion and bell pepper, cooking until softened, about 5 minutes.
  3. Stir in garlic and cook for another minute.
  4. Add mashed chickpeas, tomato sauce, tomato paste, soy sauce, maple syrup, smoked paprika, chili powder, black pepper, and salt.
  5. Simmer the mixture for 8–10 minutes, stirring occasionally, until thickened.
  6. Toast buns if desired, then spoon the chickpea mixture onto the bottom halves.
  7. Top with remaining bun halves and serve warm.

Notes

  • You can use canned or home-cooked chickpeas.
  • Adjust spices to your taste for more heat or sweetness.
  • Add shredded carrots or mushrooms for extra texture and nutrients.
