- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 2 garlic cloves, minced
- 1 (15 oz) can chickpeas, drained and mashed
- 1/2 cup tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
- Salt to taste
- 4 hamburger buns
Instructions
- Heat olive oil in a skillet over medium heat.
- Add onion and bell pepper, cooking until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add mashed chickpeas, tomato sauce, tomato paste, soy sauce, maple syrup, smoked paprika, chili powder, black pepper, and salt.
- Simmer the mixture for 8–10 minutes, stirring occasionally, until thickened.
- Toast buns if desired, then spoon the chickpea mixture onto the bottom halves.
- Top with remaining bun halves and serve warm.
Notes
- You can use canned or home-cooked chickpeas.
- Adjust spices to your taste for more heat or sweetness.
- Add shredded carrots or mushrooms for extra texture and nutrients.
