Perfect for a quick weeknight dinner or a build-your-own party spread.

Ingredients

Scale

For the Tostadas:

  • 8 small corn tortillas
  • 2 tablespoons olive oil
  • 2 cups cooked shredded chicken
  • 1/2 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup black beans, rinsed and drained
  • 1 cup corn kernels (fresh, canned, or thawed frozen)
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)

For the Guacamole:

  • 2 ripe avocados, peeled and mashed
  • 1 tablespoon lime juice
  • 1 small garlic clove, minced
  • 2 tablespoons chopped cilantro
  • Salt to taste

Instructions

  1. Preheat and Bake Tortillas: Preheat your oven to 400°F (200°C). Lightly brush both sides of the corn tortillas with olive oil. Place them on a baking sheet and bake for 8 to 10 minutes, flipping halfway through to ensure they become crispy and golden. Once done, set aside to cool slightly.
  2. Prepare Chicken Mixture: In a skillet over medium heat, add the shredded chicken. Season with cumin, chili powder, garlic powder, salt, and pepper. Stir well to coat the chicken evenly. Add the black beans and corn kernels, cooking for another 3 to 4 minutes until everything is heated through and flavors are well combined.
  3. Make the Guacamole: In a bowl, mash the peeled avocados with a fork. Stir in lime juice, minced garlic, chopped cilantro, and salt. Mix well until creamy and flavorful.
  4. Assemble the Tostadas: Spread a spoonful of the prepared guacamole on each crispy tortilla base. Top with the warm chicken, bean, and corn mixture. Then add shredded lettuce, diced tomatoes, chopped red onion, and finish with a sprinkle of shredded cheese. Serve the tostadas immediately to enjoy the crispiness.

Notes

  • Use rotisserie chicken to save time and add extra flavor.
  • Add diced jalapeños or a splash of hot sauce for extra spice.
  • These tostadas work great as a build-your-own dinner for parties or casual gatherings.
