Description

Crispy and flavorful Chicken Tostadas layered with refried beans, shredded chicken, fresh veggies, and cheese, perfect for a quick and satisfying meal.


Ingredients

  • 8 tostada shells
  • 2 cups cooked shredded chicken
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 can (15 oz) refried beans
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream (optional)
  • 1/2 cup salsa or hot sauce (optional)
  • 1 avocado, sliced (optional)

Instructions

  1. Heat olive oil in a skillet over medium heat. Add shredded chicken, cumin, chili powder, garlic powder, salt, and pepper. Stir and cook until heated through, about 5 minutes.
  2. Warm refried beans in a saucepan over low heat.
  3. Lay out the tostada shells on a flat surface or baking tray.
  4. Spread a layer of refried beans on each tostada shell.
  5. Top with seasoned chicken, followed by shredded lettuce, tomatoes, red onion, and cheese.
  6. Garnish with cilantro, and optionally top with sour cream, salsa, and avocado slices.
  7. Serve immediately while the tostada shells are crispy.

Notes

  • You can use store-bought or homemade tostada shells.
  • Rotisserie chicken works great for convenience.
  • Customize toppings based on preference or dietary needs.
  • To keep tostadas crispy, assemble just before serving.
