Description

These chicken street tacos are packed with bold, authentic Mexican flavors, featuring marinated chicken served on warm corn tortillas with fresh toppings.


Ingredients

  • 1 lb boneless skinless chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • 1/2 cup diced white onion
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup crumbled cotija cheese (optional)
  • 1 lime, cut into wedges
  • Salsa or hot sauce, for serving

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Mix well.
  2. Add chicken thighs to the marinade and let sit for at least 30 minutes, preferably 2 hours in the refrigerator.
  3. Heat a skillet or grill over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side or until fully cooked.
  4. Remove the chicken from heat and let rest for 5 minutes before chopping into bite-sized pieces.
  5. Warm the corn tortillas in a dry skillet or microwave until pliable.
  6. Assemble the tacos by placing chicken on each tortilla and topping with diced onion, cilantro, and cotija cheese if using.
  7. Serve with lime wedges and salsa or hot sauce on the side.
