- 1 lb boneless skinless chicken thighs
- 2 tbsp olive oil
- 2 tbsp lime juice
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 8 small corn tortillas
- 1/2 cup diced white onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup crumbled cotija cheese (optional)
- 1 lime, cut into wedges
- Salsa or hot sauce, for serving
Instructions
- In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, paprika, salt, and pepper. Mix well.
- Add chicken thighs to the marinade and let sit for at least 30 minutes, preferably 2 hours in the refrigerator.
- Heat a skillet or grill over medium-high heat. Cook the marinated chicken for about 5-7 minutes per side or until fully cooked.
- Remove the chicken from heat and let rest for 5 minutes before chopping into bite-sized pieces.
- Warm the corn tortillas in a dry skillet or microwave until pliable.
- Assemble the tacos by placing chicken on each tortilla and topping with diced onion, cilantro, and cotija cheese if using.
- Serve with lime wedges and salsa or hot sauce on the side.

- Marinate the chicken overnight for deeper flavor.
- Use flour tortillas if preferred.
