- 1.5 lbs boneless, skinless chicken thighs, cut into chunks
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 3 potatoes, peeled and diced
- 1 cup green peas
- 4 cups chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- 2 tablespoons chopped fresh parsley (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken pieces and cook until browned. Remove and set aside.
- In the same pot, sauté onion and garlic until softened, about 3-4 minutes.
- Add carrots, celery, and potatoes. Cook for another 5 minutes, stirring occasionally.
- Return chicken to the pot. Sprinkle flour over the ingredients and stir to coat (optional, for thickening).
- Add chicken broth, thyme, rosemary, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30-35 minutes, or until chicken is tender and vegetables are cooked through.
- Add peas and cook for another 5 minutes.
- Remove bay leaf, adjust seasoning if needed, and garnish with fresh parsley before serving.
Notes
- For extra flavor, you can sear the chicken with a bit of paprika.
- Use bone-in chicken for deeper flavor, but remove bones before serving.
- This stew can be frozen and reheated easily.
