Description

Chicken Salad Bites are a delicious and healthy appetizer or snack, made with a creamy chicken salad mixture served on bite-sized crackers or vegetables.


Ingredients

  • 1/4 cup Greek yogurt
  • 1/4 cup celery, diced

  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Instructions

  1. In a large bowl, combine the shredded chicken, mayonnaise, Greek yogurt, celery, red onion, Dijon mustard, lemon juice, salt, and pepper. Stir until well mixed.
  2. Gently fold in the fresh parsley.
  3. Chill the chicken salad mixture in the refrigerator for 30 minutes to allow the flavors to meld together.
  4. To serve, spoon a generous amount of the chicken salad onto each cracker or cucumber slice.
  5. Garnish with extra parsley or a dash of black pepper if desired.
