Chicken Salad Bites are a delicious and healthy appetizer or snack, made with a creamy chicken salad mixture served on bite-sized crackers or vegetables.

- 2 cups cooked chicken, shredded
- 1/2 cup mayonnaise
- 1/4 cup Greek yogurt
- 1/4 cup celery, diced
- 1/4 cup red onion, finely chopped
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 12–15 small crackers or cucumber slices (for serving)
Instructions
- In a large bowl, combine the shredded chicken, mayonnaise, Greek yogurt, celery, red onion, Dijon mustard, lemon juice, salt, and pepper. Stir until well mixed.
- Gently fold in the fresh parsley.
- Chill the chicken salad mixture in the refrigerator for 30 minutes to allow the flavors to meld together.
- To serve, spoon a generous amount of the chicken salad onto each cracker or cucumber slice.
- Garnish with extra parsley or a dash of black pepper if desired.
Notes
- For a healthier option, use low-fat mayonnaise and Greek yogurt.
- Chicken salad can be made in advance and stored in the refrigerator for up to 3 days.
- To add crunch, include chopped nuts like almonds or walnuts to the chicken salad mixture.
