Description

A one-pan Chicken Parmesan Pasta Skillet that combines tender chicken, marinara sauce, pasta, and melted cheese for a quick and comforting dinner.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 2 cups marinara sauce
  • 2 cups chicken broth
  • 8 ounces uncooked penne or rotini pasta
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil or parsley for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through, about 5-6 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in marinara sauce and chicken broth, then stir in uncooked pasta and Italian seasoning.
  5. Bring mixture to a boil, then reduce heat to a simmer. Cover and cook for 12-15 minutes, or until pasta is tender and cooked through, stirring occasionally.
  6. Stir in Parmesan cheese and half of the mozzarella cheese.
  7. Sprinkle the remaining mozzarella on top, cover, and let it melt for 2-3 minutes.
  8. Garnish with fresh basil or parsley if desired, and serve hot.

Notes

  • You can use rotisserie chicken for an even quicker meal.
  • Try adding red pepper flakes for a spicier kick.
  • Use whole wheat or gluten-free pasta if desired.
