Ingredients
Scale
Pasta
- 200 grams spaghetti
Protein
- 300 grams chicken breast, thinly sliced
Vegetables
- 1 bell pepper, sliced
- 1 medium carrot, julienned
- 3 green onions, chopped
Sauce and Seasonings
- 3 tablespoons soy sauce
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- 1 tablespoon sesame oil
- 1 tablespoon vegetable oil
- Salt and pepper, to taste
- 1 tablespoon sesame seeds, for garnish
Instructions
- Prepare the Chicken: Thinly slice the chicken breast and season with salt and pepper. For enhanced flavor, optionally marinate the chicken in soy sauce, minced garlic, and minced ginger for 30 minutes.
- Cook the Spaghetti: Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving a small cup of the pasta water for later use.
- Sauté Aromatics: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and ginger and sauté for about 30 seconds until fragrant.
- Cook Vegetables: Add sliced bell pepper and julienned carrot to the skillet. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Combine Ingredients: Return the cooked chicken to the skillet along with the drained spaghetti. Add soy sauce and sesame oil, tossing everything together well. If needed, add the reserved pasta water to loosen the sauce and improve consistency.
- Finish and Serve: Remove the skillet from heat, stir in the chopped green onions, and sprinkle sesame seeds over the top as garnish. Serve the lo mein spaghetti warm.
Notes
- Marinating the chicken enhances flavor but can be skipped for a quicker preparation.
- Reserve pasta water helps to adjust the sauce thickness and keep the dish moist.
- Use a wok or large skillet for best stir-frying results.
- Feel free to add other vegetables like snap peas or mushrooms to customize the dish.
- Adjust soy sauce amount for lower sodium preference.
