Sauce
- 8 oz mushrooms, sliced
- 1 small onion, chopped
- 2 cloves garlic, minced
- ½ cup dry white wine (or chicken broth)
- 1 cup chicken broth
- ½ cup heavy cream
- 1 cup shredded mozzarella or Muenster cheese
- 1 tablespoon chopped parsley (for garnish)
Instructions
- Prepare Chicken: Preheat oven to 375°F (190°C). Season the chicken breasts with salt and pepper evenly on both sides. Lightly dredge each breast in the all-purpose flour, shaking off any excess flour to ensure a thin coating.
- Sear Chicken: In a large skillet, heat olive oil and butter over medium heat until melted and hot. Add the floured chicken breasts and sear them for 2 to 3 minutes on each side, until they develop a golden-brown crust. Note that the chicken does not need to be cooked through at this stage. Transfer the seared chicken breasts to a baking dish.
- Sauté Vegetables: Using the same skillet, add sliced mushrooms and chopped onions and sauté them for about 5 to 6 minutes, or until the mushrooms soften and the onions become translucent. Add minced garlic and cook for an additional 30 seconds to release its aroma without burning.
- Deglaze Pan: Pour in the dry white wine to deglaze the skillet, scraping up any browned bits sticking to the bottom for added flavor. Allow the wine to simmer and reduce for 2 to 3 minutes, concentrating the flavors.
- Make Cream Sauce: Add chicken broth and heavy cream to the skillet. Let the mixture simmer gently for approximately 5 minutes, stirring occasionally, until the sauce thickens slightly to a creamy consistency.
- Assemble and Bake: Pour the creamy sauce evenly over the chicken breasts in the baking dish. Sprinkle the shredded mozzarella or Muenster cheese generously over each piece. Bake uncovered in the preheated oven for 25 to 30 minutes, or until the chicken is cooked through (internal temperature of 165°F) and the cheese is bubbly and golden brown.
- Garnish and Serve: Remove the dish from the oven and garnish with freshly chopped parsley. Serve the Chicken Gloria hot, ideally over mashed potatoes, rice, or buttered noodles for a complete meal.
