A delicious twist on the classic dish, this Chicken Cordon Bleu Meatloaf combines ground chicken, ham, and Swiss cheese into a savory and satisfying loaf perfect for dinner.


Ingredients

  • 1 1/2 pounds ground chicken
  • 1 cup breadcrumbs
  • 1/4 cup milk
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • 6 slices deli ham
  • 6 slices Swiss cheese
  • 2 tablespoons chopped parsley (optional, for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
  2. In a large bowl, mix together ground chicken, breadcrumbs, milk, egg, garlic powder, onion powder, salt, pepper, and Dijon mustard until well combined.
  3. Place half of the chicken mixture into the prepared loaf pan and flatten it evenly.
  4. Layer the ham slices on top of the chicken mixture, followed by the Swiss cheese slices.
  5. Top with the remaining chicken mixture and smooth the top.
  6. Bake for 45-55 minutes or until the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 10 minutes before slicing.
  8. Garnish with chopped parsley if desired and serve.

Notes

  • You can substitute turkey for chicken if preferred.
  • Use low-fat cheese and ham for a lighter version.
