- 1 1/2 pounds ground chicken
- 1 cup breadcrumbs
- 1/4 cup milk
- 1 large egg
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Dijon mustard
- 6 slices deli ham
- 6 slices Swiss cheese
- 2 tablespoons chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a loaf pan with parchment paper or lightly grease it.
- In a large bowl, mix together ground chicken, breadcrumbs, milk, egg, garlic powder, onion powder, salt, pepper, and Dijon mustard until well combined.
- Place half of the chicken mixture into the prepared loaf pan and flatten it evenly.
- Layer the ham slices on top of the chicken mixture, followed by the Swiss cheese slices.
- Top with the remaining chicken mixture and smooth the top.
- Bake for 45-55 minutes or until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for 10 minutes before slicing.
- Garnish with chopped parsley if desired and serve.
Notes
- You can substitute turkey for chicken if preferred.
- Use low-fat cheese and ham for a lighter version.
- Leftovers can be stored in the refrigerator for up to 3 days.
