Description

A creamy and savory Italian pasta dish made with chicken, eggs, Parmesan cheese, and pancetta or bacon. Perfect for a comforting and satisfying meal.


Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 2 chicken breasts, sliced
  • Salt and black pepper to taste
  • 4 oz pancetta or bacon, diced
  • 3 cloves garlic, minced
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Cook spaghetti according to package directions. Drain and reserve 1/2 cup of pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add sliced chicken, season with salt and pepper, and cook until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, cook pancetta or bacon until crispy. Add minced garlic and cook for another minute.
  4. In a bowl, whisk together eggs, Parmesan cheese, and heavy cream.
  5. Return chicken to the skillet with pancetta. Add cooked spaghetti and toss to combine.
  6. Remove skillet from heat and quickly stir in the egg mixture, tossing quickly to prevent scrambling. Add reserved pasta water as needed to thin the sauce.
  7. Garnish with parsley if desired and serve immediately.

Notes

  • Work quickly when adding the egg mixture to avoid scrambling.
  • Use freshly grated Parmesan for best flavor.
  • You can substitute pancetta with bacon if preferred.
