Chicken Marinade
- 1 lb boneless skinless chicken breast
- 1 tbsp olive oil
- 1 tbsp lime juice

- 1 tsp dried oregano
- Salt and pepper to taste
Rice and Bowl Components
- 1 cup cooked brown rice (or white rice)
- 1 tbsp fresh lime juice
- 1 cup mixed greens or Romaine lettuce
- ½ cup black beans
- ½ cup canned corn
- ½ cup cherry or grape tomatoes
- 1 avocado, sliced
- 2 tbsp Greek yogurt (or sour cream)
- 1 tbsp red onion (optional)
- 1 tbsp jalapenos (optional)
- Fresh cilantro for garnish
Instructions
- Marinate the Chicken: Mix olive oil, lime juice, paprika, ground cumin, chili powder, garlic powder, onion powder, dried oregano, salt, and pepper in a Ziploc bag. Add the chicken breasts and coat evenly. Seal the bag and refrigerate for at least 30 minutes to infuse the flavors.
- Cook the Chicken: Heat a grill pan over medium-high heat until hot. Place the marinated chicken breasts on the pan and cook for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is fully cooked. Remove from heat and let rest for 5 minutes before slicing into bite-sized pieces.
- Prepare the Rice: In a bowl, combine the cooked brown or white rice with fresh lime juice, chopped fresh cilantro, and a pinch of salt. Mix well and set aside to let the flavors meld.
- Assemble the Bowl: Begin by layering mixed greens or Romaine lettuce at the bottom of each serving bowl. Add a portion of the lime-seasoned rice on top, followed by sliced grilled chicken, black beans, corn, cherry tomatoes, and sliced avocado. Add a dollop of Greek yogurt or sour cream on top. Optionally, sprinkle with chopped red onion and jalapenos. Garnish with fresh cilantro leaves.
