  • 1 pound ground beef
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 2 1/4 cups beef broth
  • 1 (10 oz) can Rotel
  • 2 tablespoons tomato paste
  • 1 1/2 cups long-grain white rice (dry, uncooked)
  • 2 cups shredded cheese


Instructions

  1. Brown the beef and onions: Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion and cook, stirring frequently, until the beef is browned and the onions are translucent. Drain any excess grease from the skillet.
  2. Add garlic and seasoning: Stir in the minced garlic and the packet of taco seasoning. Cook for about 30 seconds to release their aromas and blend the flavors.
  3. Add liquids and tomato paste: Pour in beef broth, the can of Rotel (which includes diced tomatoes and green chilies), and tomato paste. Stir the mixture and bring it to a boil over medium-high heat.
  4. Cook the rice: Stir in the uncooked white rice and bring the mixture back to a boil. Cover the skillet, reduce heat to low, and let it simmer gently for 15 minutes, allowing the rice to absorb the liquid and cook fully.
  5. Add cheese and melt: Sprinkle the shredded cheese evenly over the top of the cooked rice and beef mixture. Cover the skillet again and cook for an additional 5 minutes until the cheese has fully melted and is bubbly.
  6. Rest and serve: Remove from heat and let the dish rest for a few minutes. Serve warm, optionally topped with your favorite garnishes such as sour cream, cilantro, or avocado slices.
