- 1 pound ground beef
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 2 1/4 cups beef broth
- 1 (10 oz) can Rotel
- 2 tablespoons tomato paste
- 1 1/2 cups long-grain white rice (dry, uncooked)
- 2 cups shredded cheese
Instructions
- Brown the beef and onions: Heat olive oil in a large skillet over medium-high heat. Add ground beef and diced onion and cook, stirring frequently, until the beef is browned and the onions are translucent. Drain any excess grease from the skillet.
- Add garlic and seasoning: Stir in the minced garlic and the packet of taco seasoning. Cook for about 30 seconds to release their aromas and blend the flavors.
- Add liquids and tomato paste: Pour in beef broth, the can of Rotel (which includes diced tomatoes and green chilies), and tomato paste. Stir the mixture and bring it to a boil over medium-high heat.
- Cook the rice: Stir in the uncooked white rice and bring the mixture back to a boil. Cover the skillet, reduce heat to low, and let it simmer gently for 15 minutes, allowing the rice to absorb the liquid and cook fully.
- Add cheese and melt: Sprinkle the shredded cheese evenly over the top of the cooked rice and beef mixture. Cover the skillet again and cook for an additional 5 minutes until the cheese has fully melted and is bubbly.
- Rest and serve: Remove from heat and let the dish rest for a few minutes. Serve warm, optionally topped with your favorite garnishes such as sour cream, cilantro, or avocado slices.
