Description

Cheesy Ranch Potatoes and Smoked Sausage is a hearty, comforting dish featuring crispy roasted potatoes, smoky sausage, and a creamy, cheesy ranch topping.


Ingredients

  • 1.5 lbs baby potatoes, quartered
  • 14 oz smoked sausage, sliced
  • 2 tbsp olive oil
  • 1 oz ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • 1/4 cup sour cream
  • 1/4 cup chopped green onions
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss the quartered potatoes with olive oil, ranch seasoning, salt, and pepper.
  3. Spread potatoes on a baking sheet in a single layer and roast for 25-30 minutes or until golden and tender.
  4. Meanwhile, in a skillet, brown the smoked sausage slices over medium heat for 5-7 minutes. Set aside.
  5. Once the potatoes are roasted, remove from the oven and sprinkle with cheddar cheese. Return to the oven for 5 more minutes until the cheese is melted.
  6. Top the cheesy potatoes with cooked sausage, sour cream, and green onions before serving.

Notes

  • You can substitute baby potatoes with russet or red potatoes, chopped into 1-inch pieces.
  • For a spicier kick, use spicy smoked sausage or add red pepper flakes.
  • Greek yogurt can be used in place of sour cream for a healthier option.
