- 1.5 lbs baby potatoes, quartered
- 14 oz smoked sausage, sliced
- 2 tbsp olive oil
- 1 oz ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1/4 cup sour cream
- 1/4 cup chopped green onions
- Salt and pepper, to taste
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss the quartered potatoes with olive oil, ranch seasoning, salt, and pepper.
- Spread potatoes on a baking sheet in a single layer and roast for 25-30 minutes or until golden and tender.
- Meanwhile, in a skillet, brown the smoked sausage slices over medium heat for 5-7 minutes. Set aside.
- Once the potatoes are roasted, remove from the oven and sprinkle with cheddar cheese. Return to the oven for 5 more minutes until the cheese is melted.
- Top the cheesy potatoes with cooked sausage, sour cream, and green onions before serving.
Notes
- You can substitute baby potatoes with russet or red potatoes, chopped into 1-inch pieces.
- For a spicier kick, use spicy smoked sausage or add red pepper flakes.
- Greek yogurt can be used in place of sour cream for a healthier option.
