Description

A comforting and nutritious Cheesy Baked Spinach Casserole combining tender spinach with creamy cottage cheese, sharp cheddar, and a hint of nutmeg, baked to bubbly perfection. This easy-to-make dish is perfect as a side or light main.

Ingredients

Scale

Vegetables & Eggs

  • 1 lb frozen spinach
  • 1 large egg
    • Dairy & Cheese

      • 1/2 cup cottage cheese
      • 1/2 cup shredded low-fat sharp cheese

      Seasonings & Other

      • 1/4 tsp kosher salt
      • 1/2 tsp ground nutmeg
      • 2 tbsp plain breadcrumbs
      • 1 large garlic clove, grated

Instructions

  1. Preheat the oven: Preheat your oven to 375 degrees Fahrenheit and grease a 9-inch oval baking dish, or an equivalent-sized dish, with non-stick cooking spray to prevent sticking.
  2. Prepare the spinach: Defrost the frozen spinach either in the microwave or by rinsing under warm water. Once thawed, use your hands to thoroughly squeeze out all excess moisture from the spinach, then place it in a medium mixing bowl.
  3. Mix ingredients: Add the egg, kosher salt, cottage cheese, ground nutmeg, shredded low-fat sharp cheese, plain breadcrumbs, and grated garlic to the spinach. Stir everything together until well combined.
  4. Bake the casserole: Pour the mixture into the prepared baking dish and bake in the preheated oven for 30 minutes or until the casserole is hot and bubbly throughout.

Notes

  • Ensure you squeeze out as much water as possible from the spinach to avoid a watery casserole.
  • You can substitute the low-fat sharp cheese with full-fat cheddar for a richer flavor.
  • The breadcrumbs help add texture; you can use gluten-free breadcrumbs if desired.
  • For extra flavor, consider adding a pinch of black pepper or some chopped onions.
  • This dish reheats well in the oven or microwave and can be served as a side or light main.
