Ingredients
Scale
Main Ingredients
- 1 tablespoon salted butter
- 1 package (16 ounces) potato gnocchi
- ½ pound lean ground beef
- ½ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon paprika
- 1 teaspoon ground cumin
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (10 ounces) Rotel Diced Tomatoes and Green Chiles (undrained)
- 1 cup beef broth
- ¼ cup heavy cream
- 1 cup shredded mild cheddar cheese
- 3 tablespoons sliced green onion
Instructions
- Toast the Gnocchi: Melt the butter in a large cast iron skillet or any oven-safe skillet over medium-high heat. Add the potato gnocchi and cook without stirring for 2 minutes until browned and toasted. Toss and continue cooking for another 2 minutes to brown the other side. Transfer the gnocchi to a large plate, cover, and set aside.
- Cook the Beef Mixture: Return the skillet to the burner and heat over medium-high. Add the lean ground beef, seasoning it with salt, pepper, paprika, and ground cumin. Add the diced onion and minced garlic. Cook, stirring occasionally, until the beef is fully browned and the onions are softened. Drain any excess fat from the skillet.
- Combine Ingredients and Simmer: Add the undrained Rotel diced tomatoes and green chiles, beef broth, and the toasted gnocchi back into the skillet. Gently stir to combine. Bring the mixture to a boil, then reduce the heat to low, cover with a lid, and let simmer until the gnocchi is tender and most of the liquid has been absorbed, about a few minutes.
- Add Cream and Cheese: Remove the skillet from heat and stir in the heavy cream and half of the shredded cheddar cheese until well combined. Evenly sprinkle the remaining cheese over the top.
- Broil the Cheese: Place the skillet under the broiler just until the cheese is melted and bubbly, watching carefully to prevent burning.
- Garnish and Serve: Remove from the oven and sprinkle sliced green onions on top for a fresh burst of flavor. Serve warm and enjoy your cheesy, savory cheeseburger gnocchi!
Notes
- Use an oven-safe skillet to easily transfer from stovetop to broiler.
- Watch the cheese closely under the broiler to avoid burning.
- Substitute heavy cream with half-and-half or whole milk for a lighter version, but the texture will be less rich.
- For extra heat, add more diced green chiles or a pinch of cayenne pepper.
- Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
