Description

This Charred Scallion and Chili Crisp Dip is a vibrant and spicy condiment that blends the smoky flavor of charred scallions with the bold heat of chili crisp. Creamy mayonnaise and sour cream balance the heat, making it a perfect dip for crackers, chips, and fresh vegetables. Ready in just 15 minutes, this dip offers an irresistible combination of textures and flavors that will elevate any snack or appetizer spread.

Ingredients

Scale

Scallions

  • Half a bunch of scallions, about 6 stalks

Base

  • 1 cup mayonnaise
  • 1/4 cup sour cream (or plain whole-milk yogurt)

Flavorings

  • 2 tablespoons chili crisp (plus more for serving)
  • Sriracha, to taste (optional)

Instructions

  1. Slice scallions: Thinly slice the scallions, keeping the white and green parts separate to ensure optimal texture and flavor in the dip.
  2. Char green scallion parts: Heat a dry skillet over medium-high heat, without adding any oil. Add the dark green parts of the scallions and cook until charred on both sides, about 6 minutes, to bring out a smoky depth. Transfer charred scallions to a bowl.
  3. Combine ingredients: To the bowl with charred scallions, add the scallion whites, chili crisp, mayonnaise, and sour cream. Stir thoroughly to combine all flavors. Taste the dip and add Sriracha if you want to add extra spiciness.
  4. Serve: Transfer the dip to a serving dish and top with additional chili crisp for an extra kick. Serve with your choice of crackers, chips, or fresh vegetables for dipping.

Notes

  • Use plain whole-milk yogurt as a substitute for sour cream to lighten the dip slightly.
  • Adjust the amount of chili crisp and Sriracha according to your preferred spice level.
  • This dip can be prepared in advance and refrigerated for up to 2 days for flavors to meld.
  • Char the scallion greens carefully to avoid burning; a good char enhances flavor without bitterness.
