These Cauliflower Chicken Nuggets are a healthier twist on a classic favorite, combining tender chicken and cauliflower into crispy, golden bites served with a tangy Dijon honey mustard dip.

- 1 cup cauliflower florets, finely chopped
- 1 lb ground chicken
- 1/2 cup breadcrumbs (use gluten-free if needed)
- 1/4 cup grated Parmesan cheese
- 1 egg
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper, to taste
- 1 tbsp olive oil (for baking or frying)
- 1/4 cup Dijon mustard
- 2 tbsp honey
- 1 tbsp Greek yogurt (optional, for creaminess in dip)
Instructions
- Preheat oven to 400°F (200°C) or heat a skillet over medium heat with olive oil if pan-frying.
- In a large bowl, combine cauliflower, ground chicken, breadcrumbs, Parmesan, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
- Shape mixture into nugget-sized pieces and place on a parchment-lined baking sheet or set aside for frying.
- If baking, lightly brush nuggets with olive oil and bake for 20–25 minutes, flipping halfway, until golden and cooked through. If frying, cook in skillet 3–4 minutes per side until golden and fully cooked.
- While nuggets cook, mix Dijon mustard, honey, and Greek yogurt in a small bowl until smooth to make the dip.
- Serve nuggets hot with the Dijon honey mustard dip.
Notes
- Use pre-riced cauliflower to save prep time.
- Substitute ground turkey for chicken if desired.
- Air fryer method: Cook at 375°F (190°C) for 12–15 minutes, shaking halfway.
- Store leftovers in the fridge for up to 3 days or freeze for longer storage.
