Description

A comforting British classic, Cauliflower Cheese features tender cauliflower florets smothered in a rich, creamy cheese sauce, baked until golden and bubbly.


Ingredients

  • 1 large cauliflower, cut into florets
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon Dijon mustard
  • 1 1/2 cups grated mature cheddar cheese
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Bring a large pot of salted water to a boil and cook the cauliflower florets for 5-7 minutes until just tender. Drain and set aside.
  3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux.
  4. Gradually whisk in the milk until smooth and bring to a simmer, stirring constantly, until the sauce thickens.
  5. Stir in the mustard, grated cheddar, salt, pepper, and nutmeg. Mix until the cheese has melted and the sauce is smooth.
  6. Place the cooked cauliflower in a baking dish and pour the cheese sauce over the top.
  7. Sprinkle with Parmesan cheese if using.
  8. Bake for 20-25 minutes or until golden and bubbling.
  9. Remove from the oven and let cool slightly before serving.
