- 1 large cauliflower, cut into florets
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 2 cups whole milk
- 1 teaspoon Dijon mustard
- 1 1/2 cups grated mature cheddar cheese
- Salt and pepper to taste
- 1/4 teaspoon ground nutmeg (optional)
- 1/4 cup grated Parmesan cheese (optional, for topping)
Instructions
- Preheat the oven to 400°F (200°C).
- Bring a large pot of salted water to a boil and cook the cauliflower florets for 5-7 minutes until just tender. Drain and set aside.
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1-2 minutes to form a roux.
- Gradually whisk in the milk until smooth and bring to a simmer, stirring constantly, until the sauce thickens.
- Stir in the mustard, grated cheddar, salt, pepper, and nutmeg. Mix until the cheese has melted and the sauce is smooth.
- Place the cooked cauliflower in a baking dish and pour the cheese sauce over the top.
- Sprinkle with Parmesan cheese if using.
- Bake for 20-25 minutes or until golden and bubbling.
- Remove from the oven and let cool slightly before serving.
Notes
- You can add a pinch of paprika on top for extra color and flavor.
- Try mixing different cheeses like Gruyère or Red Leicester for variation.
