- 2 lbs flank steak or skirt steak
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup lime juice
- 1/4 cup orange juice
- 1/4 cup soy sauce
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1/4 teaspoon paprika
- 1/4 cup chopped cilantro
- 1/2 onion, sliced (for grilling)
- Fresh tortillas (for serving)
Instructions
- In a bowl, combine olive oil, garlic, lime juice, orange juice, soy sauce, cumin, chili powder, black pepper, salt, paprika, and chopped cilantro to create the marinade.
- Place the steak in a resealable bag or shallow dish and pour the marinade over it. Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight.
- Preheat the grill to medium-high heat.
- Remove the steak from the marinade and discard the marinade.
- Grill the steak for 4-6 minutes per side, or until desired doneness is reached (for medium-rare, aim for an internal temperature of 130°F-135°F).
- Let the steak rest for 5 minutes after grilling, then slice thinly against the grain.
- Grill the sliced onion on the same grill until tender and slightly charred.
- Serve the carne asada with fresh tortillas, grilled onions, and additional cilantro if desired.
Notes
- Flank steak or skirt steak are both ideal cuts for carne asada due to their tenderness when marinated and grilled.
- Marinate the meat for at least 2 hours, but overnight is best for maximum flavor.
- If you prefer a spicier kick, add some chili flakes or a finely chopped jalapeño to the marinade.
- Carne asada can be served with a variety of sides like guacamole, salsa, or a fresh salad.
