Description

A light and refreshing Caprese Zoodle Salad made with zucchini noodles, cherry tomatoes, mozzarella, and fresh basil, drizzled with balsamic glaze.


Ingredients

  • 2 medium zucchini, spiralized
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls (bocconcini), halved
  • 1/4 cup fresh basil leaves, torn
  • 2 tbsp balsamic glaze
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Spiralize the zucchini into noodles and place them in a large bowl.
  2. Add the halved cherry tomatoes, mozzarella balls, and torn basil leaves to the bowl.
  3. Drizzle with olive oil and season with salt and pepper.
  4. Toss gently to combine all ingredients.
  5. Drizzle balsamic glaze over the top just before serving.

Notes

  • Use a spiralizer or julienne peeler for best zucchini noodles.
  • Chill the salad for 15 minutes before serving for a more refreshing taste.
  • Can substitute mozzarella balls with diced fresh mozzarella block.
