- 2 medium zucchini, spiralized
- 1 cup cherry tomatoes, halved
- 1 cup mozzarella balls (bocconcini), halved
- 1/4 cup fresh basil leaves, torn
- 2 tbsp balsamic glaze
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Spiralize the zucchini into noodles and place them in a large bowl.
- Add the halved cherry tomatoes, mozzarella balls, and torn basil leaves to the bowl.
- Drizzle with olive oil and season with salt and pepper.
- Toss gently to combine all ingredients.
- Drizzle balsamic glaze over the top just before serving.
Notes
- Use a spiralizer or julienne peeler for best zucchini noodles.
- Chill the salad for 15 minutes before serving for a more refreshing taste.
- Can substitute mozzarella balls with diced fresh mozzarella block.
