Scale
- 1 pound fresh strawberries, washed and dried
- 1 cup granulated sugar
- 1/2 cup water
- 1 tablespoon light corn syrup (optional, for extra shine)
Instructions
- Prepare a baking sheet lined with parchment paper and set aside.
- In a medium saucepan, combine sugar, water, and corn syrup (if using). Heat over medium heat without stirring until the sugar dissolves and the mixture reaches 300°F (hard crack stage) on a candy thermometer.
- Reduce the heat to low to keep the syrup warm and fluid.
- Carefully dip each strawberry into the syrup, coating it evenly, and place on the prepared baking sheet.
- Allow the candied strawberries to cool and harden completely at room temperature before serving.
Notes
- Ensure strawberries are completely dry before dipping to prevent splattering.
- Work quickly as the sugar syrup hardens fast once removed from heat.
- Do not refrigerate candied strawberries; they are best eaten the same day.
