- 2 boneless, skinless chicken breasts
- 2 tablespoons Cajun seasoning
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 2 cloves garlic, minced
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Slice the chicken breasts into strips and toss with Cajun seasoning until well coated.
- Heat olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook for 5-7 minutes, until browned and cooked through. Remove and set aside.
- In the same skillet, add the sliced bell peppers, onion, and garlic. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender.
- Return the chicken to the skillet and stir to combine with the vegetables.
- Add lemon juice and season with salt and pepper to taste. Cook for another 2 minutes.
- Garnish with chopped parsley and serve hot.
Notes
- Serve with rice, quinoa, or in tortillas for wraps.
- Adjust Cajun seasoning to control the heat level.
- Use pre-sliced peppers to save time.
