Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Slice the chicken breasts into strips and toss with Cajun seasoning until well coated.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook for 5-7 minutes, until browned and cooked through. Remove and set aside.
  4. In the same skillet, add the sliced bell peppers, onion, and garlic. Cook for 5-6 minutes, stirring occasionally, until the vegetables are tender.
  5. Return the chicken to the skillet and stir to combine with the vegetables.
  6. Add lemon juice and season with salt and pepper to taste. Cook for another 2 minutes.
  7. Garnish with chopped parsley and serve hot.
