Ingredients

  • 2 chicken breasts, cut into strips
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a bowl, toss the chicken strips with Cajun seasoning, paprika, garlic powder, onion powder, salt, and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the seasoned chicken to the skillet and cook for 5-7 minutes until browned and cooked through.
  4. Remove the chicken and set aside.
  5. In the same skillet, add a bit more oil if needed and sauté the bell peppers until tender-crisp, about 5 minutes.
  6. Return the chicken to the skillet and toss everything together, cooking for another 2-3 minutes.
  7. Garnish with fresh parsley and serve hot.
