Description

Bursting Blueberry Biscuits are soft, fluffy, and buttery biscuits filled with juicy blueberries and topped with a sweet vanilla glaze. These easy drop biscuits come together quickly and are perfect for breakfast, brunch, or an afternoon treat with coffee or tea.

Ingredients

Scale

Biscuit Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, cold and cubed
  • ¾ cup whole milk, plus more if needed
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (do not thaw if frozen)

Glaze Ingredients

  • 1 cup powdered sugar
  • 1–2 tablespoons milk
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven and prepare baking sheet: Preheat the oven to 425°F (218°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Mix dry ingredients: In a large bowl, whisk together the all-purpose flour, baking powder, salt, and granulated sugar until well combined.
  3. Cut in butter: Add the cold, cubed unsalted butter to the dry mixture. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs with some pea-sized pieces remaining.
  4. Add wet ingredients: In a small bowl, mix the whole milk and vanilla extract. Pour this mixture into the dry ingredients and gently stir just until combined. Do not overmix to keep the biscuits tender.
  5. Fold in blueberries: Carefully fold the fresh or frozen blueberries into the dough, making sure not to break the berries and discolor the dough.
  6. Shape and bake biscuits: Drop heaping spoonfuls of dough, about ¼ cup each, onto the prepared baking sheet, spacing them a few inches apart. Bake in the preheated oven for 15–18 minutes or until the biscuit tops are golden brown and cooked through.
  7. Cool slightly: Remove the biscuits from the oven and let them cool slightly on the baking sheet before glazing.
  8. Prepare the glaze: In a small bowl, whisk together the powdered sugar, 1 to 2 tablespoons of milk, and vanilla extract until smooth and pourable.
  9. Glaze the biscuits: Drizzle the vanilla glaze over the warm biscuits before serving for a sweet finishing touch.

Notes

  • If using frozen blueberries, do not thaw them to prevent the dough from turning purple or blue.
  • Add lemon zest to the glaze for a fresh and vibrant citrus flavor.
  • Biscuits are best served warm but can be reheated in the oven or microwave for leftovers.
