  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cooked and shredded
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing (or blue cheese dressing, optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 green onions, chopped (for garnish)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
  2. In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread the sweet potatoes in the baking dish and roast for 20-25 minutes, or until tender.
  4. In a separate bowl, mix shredded chicken with buffalo wing sauce and ranch dressing.
  5. Remove sweet potatoes from oven and top evenly with the buffalo chicken mixture.
  6. Sprinkle mozzarella and cheddar cheese over the chicken layer.
  7. Return the casserole to the oven and bake for an additional 10-15 minutes, until cheese is melted and bubbly.
  8. Garnish with chopped green onions before serving.
