- 2 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- 1 pound boneless, skinless chicken breasts, cooked and shredded
- 1/2 cup buffalo wing sauce
- 1/2 cup ranch dressing (or blue cheese dressing, optional)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 2 green onions, chopped (for garnish)
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
- In a large bowl, toss the diced sweet potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
- Spread the sweet potatoes in the baking dish and roast for 20-25 minutes, or until tender.
- In a separate bowl, mix shredded chicken with buffalo wing sauce and ranch dressing.
- Remove sweet potatoes from oven and top evenly with the buffalo chicken mixture.
- Sprinkle mozzarella and cheddar cheese over the chicken layer.
- Return the casserole to the oven and bake for an additional 10-15 minutes, until cheese is melted and bubbly.
- Garnish with chopped green onions before serving.
