Ingredients
Scale
Pasta
- 12 oz penne or spaghetti pasta
Chicken
- 2 boneless skinless chicken breasts
- Salt and pepper to taste
- 1 teaspoon Italian seasoning
Sauce and Toppings
- 2 tablespoons olive oil (divided)
- 2 cups cherry tomatoes, halved
- 3 cloves garlic, minced
- 1 tablespoon balsamic vinegar
- 1/4 cup fresh basil, chopped
- 1/2 cup grated Parmesan cheese
- Extra balsamic glaze and basil for topping (optional)
Instructions
- Cook the Pasta: Bring a large pot of salted water to a boil and cook the penne or spaghetti according to the package instructions until al dente. Drain the pasta and set aside.
- Prepare the Chicken: Season both sides of the chicken breasts with salt, pepper, and Italian seasoning. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken and cook for 5 to 6 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
- Sauté Garlic and Tomatoes: In the same skillet, add the remaining tablespoon of olive oil. Sauté the minced garlic for about 30 seconds until fragrant. Add the halved cherry tomatoes and cook for 3 to 4 minutes, until the tomatoes soften and begin to release their juices.
- Add Balsamic Vinegar: Stir in the balsamic vinegar and cook for an additional minute to blend the flavors.
- Toss Pasta with Sauce: Add the cooked pasta to the skillet, tossing it with the tomato mixture until well combined. Stir in the grated Parmesan cheese and chopped fresh basil until everything is evenly coated.
- Assemble and Serve: Top the pasta with the sliced chicken breasts. Drizzle with extra balsamic glaze and sprinkle additional basil on top if desired. Serve warm and enjoy.
Notes
- This recipe works well with grilled or leftover chicken for a quick meal.
- Add a pinch of red pepper flakes to the tomato sauce for a spicy kick.
- For extra creaminess, add mozzarella pearls or fresh mozzarella on top.
