Description

A comforting and hearty casserole combining tender chicken, broccoli, rice, and creamy cheese sauce, perfect for a family dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 2 cups cooked white rice
  • 2 cups broccoli florets, steamed
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese, divided
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional, for topping)
  • 1 tbsp butter (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, mix together the cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and pepper.
  3. Stir in the cooked chicken, rice, broccoli, and 1 1/2 cups of the shredded cheddar cheese.
  4. Transfer the mixture to the prepared baking dish and spread evenly.
  5. Sprinkle the remaining 1/2 cup of cheese over the top.
  6. If using, mix breadcrumbs with melted butter and sprinkle on top for a crispy topping.
  7. Bake uncovered for 25–30 minutes, or until bubbly and cheese is melted.
  8. Let rest for 5 minutes before serving.

Notes

  • Use rotisserie chicken for a quick prep option.
  • Can substitute brown rice for added fiber.
  • Frozen broccoli can be used if thawed and drained first.
  • Add a pinch of red pepper flakes for a spicy kick.
