- 4 boneless, skinless chicken breasts
- 1 cup chopped broccoli (steamed)
- 1 cup shredded cheddar cheese
- 2 oz cream cheese, softened
- 2 cloves garlic, minced
- 1/2 tsp onion powder
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- In a mixing bowl, combine chopped steamed broccoli, cheddar cheese, cream cheese, garlic, onion powder, paprika, salt, and pepper.
- Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.
- Stuff each chicken breast with the broccoli cheddar mixture.
- Secure with toothpicks if needed.
- Heat olive oil in a skillet over medium-high heat and sear each side of the chicken breasts until golden brown, about 2–3 minutes per side.
- Transfer the chicken to a baking dish and bake in the oven for 20–25 minutes or until the internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
- You can use frozen broccoli—just thaw and drain well before using.
- Try adding cooked bacon bits to the stuffing for extra flavor.
- Use a meat thermometer to ensure doneness.
