Ingredients
Scale
Fruits
- 2 cups fresh blueberries
- 2 ripe peaches, sliced
Greens & Cheese
- 4 cups mixed greens (arugula and spinach)
- 1 cup crumbled feta cheese
Dressing & Toppings
- ¼ cup balsamic vinaigrette
- ¼ cup chopped pecans or walnuts, toasted
Instructions
- Rinse Blueberries: Rinse the blueberries under cool running water until they are clean and shiny, then drain well.
- Slice Peaches: Cut the ripe peaches into wedges, removing the pits, and set aside.
- Combine Greens: In a large salad bowl, place the mixed greens (arugula and spinach) as the fresh base for the salad.
- Add Fruits: Gently fold the rinsed blueberries and sliced peaches into the greens, being careful not to crush the fruit.
- Add Feta Cheese: Sprinkle the crumbled feta cheese evenly over the salad for a creamy, tangy contrast.
- Dress Salad: Drizzle the balsamic vinaigrette over the salad and toss gently to ensure all the ingredients are lightly coated.
- Add Nuts: Finish by sprinkling the toasted chopped pecans or walnuts on top for a delightful crunch and nutty flavor.
Notes
- To toast nuts, heat them in a dry pan over medium heat for 3-5 minutes until fragrant, stirring frequently to avoid burning.
- For a vegan version, omit the feta cheese or substitute with a plant-based cheese alternative.
- Use fresh, ripe peaches for the best flavor; if unavailable, nectarines can be a good substitute.
- Prepare the salad just before serving to keep the greens crisp and fresh.
- Extra balsamic vinaigrette can be served on the side for those who prefer more dressing.
