Description

These Black Bean Tacos are a quick, delicious, and healthy meatless option packed with flavor and perfect for busy weeknights.


Ingredients

  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1/4 cup water or vegetable broth
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1/2 cup shredded cheese (optional)
  • 1 avocado, sliced (optional)
  • Lime wedges, for serving

Instructions

  1. Heat olive oil in a skillet over medium heat. Add diced onion and sauté until softened, about 5 minutes.
  2. Add minced garlic, cumin, chili powder, smoked paprika, and salt. Cook for another minute until fragrant.
  3. Add the black beans and water or vegetable broth. Stir to combine and simmer for 5-7 minutes until heated through and slightly thickened.
  4. While the beans cook, warm the corn tortillas in a dry skillet or microwave until pliable.
  5. Spoon the black bean mixture into the warm tortillas.
  6. Top with lettuce, tomatoes, cilantro, cheese, avocado, and a squeeze of lime as desired.
  7. Serve immediately and enjoy!
