Description

Bird Dog Sandwiches are a delicious and easy-to-make American main course featuring shredded chicken coated with barbecue sauce, piled onto toasted sandwich rolls, and topped with cheddar cheese, pickles, and red onion. This recipe is perfect for a quick lunch or casual dinner and can be customized with coleslaw or hot sauce for extra flavor.

Ingredients

Scale

Chicken Mixture

  • 1 pound cooked and shredded chicken breast
  • 1/2 cup barbecue sauce plus extra for serving

Sandwich Assembly

  • 4 sandwich rolls or hamburger buns
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced pickles
  • 1/4 cup thinly sliced red onion
  • 1/4 cup coleslaw (optional)
  • 1 tablespoon butter, softened

Instructions

  1. Preheat: Preheat the oven to 350°F.
  2. Mix Chicken: In a medium bowl, toss the shredded chicken with 1/2 cup barbecue sauce until evenly coated to infuse the chicken with rich flavor.
  3. Prepare Rolls: Slice the sandwich rolls in half, then lightly butter the cut sides to help them toast nicely.
  4. Toast Rolls: Place the rolls cut side up on a baking sheet and toast in the oven for 5 minutes until lightly golden for a crisp texture.
  5. Assemble Sandwiches: Remove rolls from the oven and pile the barbecue chicken onto the bottom halves of each roll. Evenly sprinkle shredded cheddar cheese over the chicken, then add pickles and red onion slices. Optionally add coleslaw for extra crunch and flavor.
  6. Finish Baking: Place the top halves of the rolls on each sandwich and return to the oven for 5 more minutes to allow the cheese to melt slightly, melding all flavors together.
  7. Serve: Serve the sandwiches warm with extra barbecue sauce or coleslaw on the side if desired for added tang and moisture.

Notes

  • For added flavor, mix a little hot sauce into the barbecue chicken to give it a spicy kick.
  • You can substitute pulled pork instead of chicken for a delicious variation.
  • Prepare the chicken mixture ahead of time and assemble the sandwiches just before baking to save time on serving day.
