Description

A delicious fusion of Mexican and Italian cuisines, this Taco Lasagna layers tortillas, seasoned beef, cheese, and salsa for a hearty and flavorful meal.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 2 cups salsa
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 9 small flour tortillas
  • 1/2 cup chopped green onions (optional)
  • 1/4 cup chopped fresh cilantro (optional)
  • Sour cream, for serving (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
  3. Add taco seasoning and water to the beef. Stir and simmer for 5 minutes until thickened.
  4. Stir in black beans and corn. Cook for another 2-3 minutes.
  5. In a 9×13-inch baking dish, spread a thin layer of salsa on the bottom.
  6. Place 3 tortillas over the salsa, overlapping as needed.
  7. Spread 1/3 of the beef mixture over the tortillas, then sprinkle with 1/3 of both cheeses and 1/3 of the remaining salsa.
  8. Repeat layers two more times: tortillas, beef, cheese, and salsa.
  9. Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes until cheese is bubbly and golden.
  10. Let stand for 10 minutes before slicing. Garnish with green onions, cilantro, and sour cream if desired.

Notes

  • Use ground turkey or chicken for a lighter option.
  • Flour or corn tortillas can be used based on preference.
  • Lasagna can be made ahead and refrigerated or frozen before baking.
