A delicious fusion of Mexican and Italian cuisines, this Taco Lasagna layers tortillas, seasoned beef, cheese, and salsa for a hearty and flavorful meal.

- 1 lb ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, canned, or frozen)
- 2 cups salsa
- 2 cups shredded cheddar cheese
- 2 cups shredded Monterey Jack cheese
- 9 small flour tortillas
- 1/2 cup chopped green onions (optional)
- 1/4 cup chopped fresh cilantro (optional)
- Sour cream, for serving (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium heat, cook the ground beef until browned. Drain excess grease.
- Add taco seasoning and water to the beef. Stir and simmer for 5 minutes until thickened.
- Stir in black beans and corn. Cook for another 2-3 minutes.
- In a 9×13-inch baking dish, spread a thin layer of salsa on the bottom.
- Place 3 tortillas over the salsa, overlapping as needed.
- Spread 1/3 of the beef mixture over the tortillas, then sprinkle with 1/3 of both cheeses and 1/3 of the remaining salsa.
- Repeat layers two more times: tortillas, beef, cheese, and salsa.
- Cover with foil and bake for 25 minutes. Remove foil and bake another 10 minutes until cheese is bubbly and golden.
- Let stand for 10 minutes before slicing. Garnish with green onions, cilantro, and sour cream if desired.
Notes
- Use ground turkey or chicken for a lighter option.
- Flour or corn tortillas can be used based on preference.
- Lasagna can be made ahead and refrigerated or frozen before baking.
