Description

A hearty and comforting traditional Portuguese kale soup, also known as Caldo Verde, made with potatoes, kale, and chorizo sausage.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 4 large potatoes, peeled and diced
  • 1/2 pound Portuguese chorizo or linguica sausage, sliced
  • 4 cups kale, stemmed and thinly sliced
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and garlic, and sauté until soft and translucent.
  2. Add the diced potatoes and broth to the pot. Bring to a boil, then reduce heat and simmer for about 20 minutes, or until potatoes are tender.
  3. Use a potato masher or immersion blender to partially mash the potatoes in the soup, leaving some chunks for texture.
  4. Add the sliced chorizo and cook for another 10 minutes.
  5. Stir in the kale and cook for an additional 5-10 minutes, until the kale is tender.
  6. Season with salt and pepper to taste. Serve hot with crusty bread if desired.

Notes

  • For a vegetarian version, omit the chorizo and use vegetable broth.
  • Collard greens or spinach can be substituted for kale if preferred.
  • This soup can be made ahead and tastes even better the next day.
