Description

These fully loaded nachos are the ultimate party snack or casual dinner, layered with seasoned ground beef, melty cheese, and your favorite toppings like jalapeños, sour cream, and guacamole. They’re quick to make, endlessly customizable, and always a crowd-pleaser.

Ingredients

Scale

Protein & Seasoning

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 packet taco seasoning (or 2 tablespoons homemade blend)
  • ¼ cup water

Base

  • 10 ounces tortilla chips

Toppings

  • 2 cups shredded cheddar cheese (or Mexican blend)
  • ½ cup black beans (drained and rinsed)
  • ½ cup corn kernels (fresh or frozen)
  • ¼ cup sliced jalapeños
  • 1 Roma tomato (diced)
  • ¼ cup red onion (finely chopped)
  • ¼ cup sliced black olives
  • ¼ cup chopped cilantro
  • ½ cup sour cream
  • ½ cup guacamole
  • ¼ cup salsa or pico de gallo
  • lime wedges for serving

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the nachos evenly and melting the cheese perfectly.
  2. Cook Ground Beef: In a skillet over medium heat, warm the olive oil and brown the ground beef until fully cooked, about 6–8 minutes. Drain any excess fat.
  3. Season Beef: Stir in the taco seasoning and water, then simmer for 2–3 minutes until the mixture thickens and flavors meld.
  4. Assemble Nachos: Arrange the tortilla chips in an even layer on a large baking sheet or oven-safe platter. Top with the cooked beef, shredded cheese, black beans, corn kernels, and sliced jalapeños.
  5. Bake: Place the assembled nachos in the preheated oven and bake for 8–10 minutes, or until the cheese has fully melted and is bubbly.
  6. Add Fresh Toppings: Remove the nachos from the oven and immediately top with diced Roma tomato, chopped red onion, sliced black olives, cilantro, and dollops of sour cream, guacamole, and salsa or pico de gallo.
  7. Serve: Serve the nachos warm with lime wedges on the side for squeezing over to add bright, fresh flavor.

Notes

  • Swap beef for shredded chicken, pulled pork, or a vegetarian protein like lentils or tofu for variation.
  • For an extra cheesy touch, drizzle warm queso over the top before serving.
  • Best enjoyed fresh as leftovers tend to get soggy.
