Description

A delicious Taco Bell copycat, this Grilled Cheese Burrito is packed with seasoned beef, rice, nacho cheese, and a creamy chipotle sauce, all wrapped in a warm tortilla and grilled to perfection.


Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup cooked rice
  • 1/2 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 2 tbsp chipotle sauce
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup fiesta blend cheese
  • 4 large flour tortillas
  • 1/2 cup tortilla strips (optional for crunch)
  • Cooking spray or butter for grilling

Instructions

  1. Cook the ground beef in a skillet over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and water. Stir and simmer until sauce thickens, about 5 minutes.
  3. In a bowl, mix sour cream and chipotle sauce to make the chipotle sour cream.
  4. Warm tortillas slightly to make them pliable.
  5. Assemble each burrito by layering rice, beef, nacho cheese sauce, chipotle sour cream, shredded cheddar and mozzarella cheeses, and tortilla strips.
  6. Roll up the burritos tightly, tucking in the sides.
  7. Sprinkle fiesta blend cheese on a non-stick skillet over medium heat. Place the burrito seam-side down onto the melted cheese and press gently.
  8. Grill for 2-3 minutes until the cheese is crispy and golden. Flip and lightly toast the other side.
  9. Serve hot and enjoy!
