Description

These French Toast Muffin Cups are a quick and easy breakfast option made with simple ingredients. Perfectly portioned and packed with flavor, they’re ideal for busy mornings or make-ahead meal prep.

Ingredients

Units Scale
  • 6 cups cubed bread (preferably day-old or slightly stale)
  • 4 large eggs
  • 1 cup milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp melted butter
  • Powdered sugar, for topping (optional)
  • Fresh berries or syrup, for serving (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In a large mixing bowl, whisk together eggs, milk, maple syrup, vanilla extract, cinnamon, and salt.
  3. Add the cubed bread to the mixture and gently stir to coat all the pieces. Let sit for 5 minutes to absorb.
  4. Spoon the soaked bread evenly into the prepared muffin cups and drizzle with melted butter.
  5. Bake for 20-25 minutes, or until golden brown and set in the middle.
  6. Allow to cool slightly before removing from the pan.
  7. Top with powdered sugar and serve with berries or syrup if desired.

Notes

  • You can prepare the mixture the night before and bake in the morning.
  • Use brioche or challah bread for a richer texture.
  • Add chocolate chips or nuts for extra flavor.
