- 4 cups fresh broccoli florets
- 1/2 cup red onion, finely chopped
- 1/2 cup dried cranberries
- 1/2 cup sunflower seeds
- 1/2 cup shredded cheddar cheese
- 1/2 cup plain Greek yogurt
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- In a large bowl, combine the broccoli, red onion, dried cranberries, sunflower seeds, and shredded cheddar cheese.
- In a separate small bowl, whisk together the Greek yogurt, apple cider vinegar, honey (or maple syrup), salt, and pepper.
- Pour the dressing over the broccoli mixture and toss until everything is well coated.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Stir again before serving and enjoy chilled.
Notes
- For extra crunch, add chopped bacon or roasted almonds.
- This salad can be made a day ahead and stored in the refrigerator.
- Use low-fat Greek yogurt for an even lighter version.
