For the spring rolls:

- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro
- 1/4 cup fresh basil (optional)
- Lettuce leaves or shredded romaine (optional)
For the peanut lime sauce:
- 1/3 cup creamy peanut butter
- 1 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon lime juice (freshly squeezed)
- 1 teaspoon rice vinegar
- 1 teaspoon honey or maple syrup
- 1 clove garlic, minced
- 1/4 to 1/3 cup warm water (to thin to desired consistency)
- Optional: pinch of chili flakes or a dash of sriracha for heat
Instructions
- Make the peanut lime sauce: In a medium bowl, whisk together the peanut butter, soy sauce, hoisin sauce, lime juice, rice vinegar, honey or maple syrup, and minced garlic until well combined. Gradually add the warm water, whisking continuously until the sauce reaches a smooth, pourable consistency. Taste and adjust seasoning if necessary. Set aside the sauce for dipping.
- Prepare the filling ingredients: Have all your thinly sliced cooked beef, cooked vermicelli noodles, shredded carrots, julienned cucumber, sliced red bell pepper, and fresh herbs ready and within arm’s reach for easy assembly.
- Soften the rice paper wrappers: Pour warm water into a shallow dish. Submerge one rice paper wrapper at a time for 10–15 seconds until it softens but remains slightly firm. Lay the softened wrapper flat on a clean surface, ready to fill.
- Assemble the spring rolls: Place a small handful of beef slices in the center of the wrapper. Layer with a portion of vermicelli noodles and then add the shredded carrots, cucumber, red bell pepper, and fresh herbs. If using, add lettuce or shredded romaine for extra crunch. Fold the sides of the wrapper inward, then roll tightly from the bottom up like a burrito, ensuring the roll is snug and secure. Repeat this process with all remaining wrappers and filling.
