- 1 medium head cauliflower, cut into florets
- 1/2 cup flour (all-purpose or gluten-free)
- 1/2 cup water
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1 cup BBQ sauce
- 1 cup cooked brown rice or quinoa
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
- 1/4 cup red onion, thinly sliced
- 1/4 cup corn kernels
- 1 tbsp olive oil (for baking)
- Fresh cilantro or parsley for garnish (optional)
Instructions
- Preheat the oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together flour, water, garlic powder, smoked paprika, and salt to form a batter.
- Dip cauliflower florets into the batter, letting the excess drip off, then place on the baking sheet.
- Drizzle with olive oil and bake for 20 minutes, flipping halfway through.
- Remove from oven, toss baked cauliflower with BBQ sauce, and return to oven for another 10 minutes.
- While cauliflower bakes, prepare the rice or quinoa and chop vegetables.
- Assemble the bowl: start with a base of grains, top with BBQ cauliflower, carrots, cucumber, red onion, and corn.
- Garnish with fresh herbs and extra BBQ sauce if desired. Serve warm.

- You can use store-bought or homemade BBQ sauce depending on your preference.
- Swap in different grains like farro or couscous if desired.
- For extra crunch, add toasted pumpkin seeds or slivered almonds.
